Low Carb Grain Free French Toast

Who doesn’t love french toast? But living a low carb lifestyle, you may think this is something that you will never get to enjoy again. Not so! This recipe not only shows you haw to make low carb bread, but MICROWAVEABLE low carb bread, so you can quickly whip up this recipe without the wait of having to bake a loaf of bread! Ingredients

Bread

eggs

1 tsp butter

2 tbsp almond flour

2 tbsp coconut flour

1 ½ tsp baking powder

2 tbsp cream

1 pinch salt

Batter

egg

2 tbsp cream

½ tsp cinnamon

2 tbsp butter

1 pinch salt

Topping Options

sugar-free maple syrup

cinnamon & erythritol mixture

blueberries

nut butter

whipped cream

candied pecans

Directions

Grease a small-to-medium, square storage container (keep in mind this will be the size you want your bread).

Blend all dry ingredients in a bowl.

Add the eggs and cream and blend with a fork or whisk.

Add the mixture to your greased container and put in the microwave on full heat for about 2-3 minutes or until the bread is done.
Note: the bread is done once the middle is firm but the sides aren't too dry.

Slice the bread diagonally into two triangles and then slice each triangle in the middle so it becomes two thinner triangles.

Heat butter in skillet over medium-high heat.

Whisk together egg, cream, cinnamon and salt in a bowl.

Pour the mixture over the bread slices and turn them around in the batter, allowing them to soak for a minute or two.

Fry the french toast pieces for several minutes on each side, until golden brown.

Place the french toast slices on a paper towel and allow it to cool for a minute or two.

Serve your keto french toast topped with your favorite keto toppings like peanut butter, blueberries, whipped cream, or nuts.
