LOW CARB SNICKERS® BAR

Who doesn’t love a SNICKERS®? No one. As an avid hiker, the SNICKERS® bar is THE HIKERS STAPLE. but, as I transitioned to a low carb lifestyle, those were no longer on plan for me during hikes. What’s a hiker to do? There is nothing like that sweet, salty, chewy combo after a hard climb. Guess what, as with everything else, I can just make my own low carb version! Here is your recipe to make a low carb version of the SNICKERS® bar. Yes, it’s a recipe that is going to take some time to make, but since you are getting 12 candy bars out of this recipe, the work is well worth it! Thanks to ketogenic for this recipe.

TO MAKE THE KETO CARAMEL FIRST 1 ¼ cups allulose

½ cup heavy whipping cream

3 tbsp unsalted butter

¼ tsp salt (Optional: add additional salt for salted caramel taste)

1 tsp vanilla extract (can substitute for vanilla flavored liquid stevia)

2 tsp caramel-flavored liquid stevia drops

1 tbsp water

1 Melt the butter in a microwavable safe bowl.

2 Add the heavy whipping cream to the melted butter and stir until well combined.

3 Add the allulose, salt, and water to a saucepan and stir with a fork until well combined.

4 Cook the mixture over medium heat until the mixture begins to change color/ become less opaque (if you have a food thermometer, this will be around 300F/ 150C).

5 Remove the pan from heat and add the melted butter/heavy cream mixture in.

6 Return the pan and heat over medium heat until the mixture begins to thicken and turn brown.
Note: Make sure to stir frequently so that the caramel does not burn.

Once the caramel has thickened, add in the vanilla and stevia drops, stirring well.

7 Once the mixture has both the color and texture of caramel, remove the pan from heat, and quickly pour the mixture into the pan. Note: you must do this quickly or the caramel will begin to harden.

TO MAKE THE REST OF THE LAYERS OF THE SNICKERS®

1 cup unsweetened peanut butter

1 ⅓ cups confectioners Swerve

⅓ cup peanuts, halved

9 oz sugar-free chocolate (Lily's dark chocolate chips used)

½ tbsp coconut oil

1 Line a pan with parchment paper.

2 In a microwavable safe bowl, heat the peanut butter for 15-20 sec until slightly melted.

3 To make the nougat layer, slowly stir the confectioners Swerve into the peanut butter until you obtain a dough-like texture.

4 Press the dough evenly into the lined pan and freeze for 1 hour.

5 If you have not made the caramel yet, follow this recipe now to do so.

6 Remove the nougat from the freezer.

7 Melt the caramel and pour it onto the nougat layer, spreading evenly.

8 While the caramel is still warm, sprinkle the peanut halves on top.

9 Freeze for 2 hours.

10 Remove from the freezer and cut into 12 rectangles.

11 In a microwavable safe bowl, melt the chocolate and coconut oil together until completely melted.

12 In order to coat the bars in chocolate, you can either hold each piece with a fork and drip into the melted chocolate or if you have a wire rack, place the bars on top and drizzle the chocolate over. Allow the chocolate to harden, flip the bars and coat the other side.

13 Place the snickers bars in the fridge for 1 hour and serve. Enjoy your Keto Snickers Bar!
