Low Carb Peanut Butter Chocolate No Bake Cookies

Ingredients

1 cup unsweetened coconut flakes or shredded coconut

2 tbsp grass-fed butter

2 tbsp unsweetened cocoa powder

4 tbsp creamy peanut butter (make sure to get fresh gound peanut butter preferably organic, not the canned peanut butter with sugar, oils, and preservatives added!)

4 TBS raw cacao butter, we recommend Navitas brand (may be replaced with regular butter if unavailable)

โ…“ cup erythritol (We recommend Anthonyโ€™s brand)

Directions

In a saucepan, melt the butter and cacao butter over medium heat.

Stir in erythritol and cocoa powder, mixing until well combined.

Stir in peanut butter and cook for 1-2 minutes.

Remove from heat and stir in coconut flakes.

Drop even spoonfuls of mixture onto a plate or cookie sheet and place in freezer.

Freeze for 15-20 minutes or until cookies are firm.
Note: Store in the fridge.
